In the first half of the year, many student services are focusing on the “Save the Potato!” initiative. It aims to make good use of surplus potatoes from the previous harvest and thus take a stand against food waste. The focus is on appreciating food, regional agriculture, and sustainable nutrition.
Background: Good harvest, low demand
After a particularly good potato harvest in 2025, large quantities remained in many regions. Although they are suitable for consumption, not all of them are used as food. The aim of the “Save the Potato!” campaign is to make better use of this potential and to focus more attention on potatoes.
Potato dishes marked on the menu
Potatoes have always been a staple in our canteens. In 2025 alone, over 65,000 kg of fresh potatoes were purchased (around 75 percent of which were organic), as well as over 35,000 kg of potato convenience products such as gnocchi, French fries, Schupfnudeln, and Rösti. Accordingly, a variety of potato dishes are regularly on the menu.
For better orientation, these dishes are now marked with a potato symbol on the menu. This makes it easy to see at a glance which dishes contain potatoes as an ingredient.
A wide variety of potato dishes will be offered in the canteens until the end of June. By choosing a potato dish, you are saving potatoes and helping to prevent food waste – so go ahead and dig in!
